Keeping Super Bowl Snacks Healthy
The Super Bowl does not have to mean an afternoon filled with sodium & chemical laden snacks, dips and beer. With a little creativity and motivation you can create some simple little snack foods that will actually provide some nutrition to the party. we advise all of our HCG Diet patients to have fun and also be mindful!
Healthy “Chips” with Creamy Artichoke/Greens Dip
This recipe always goes over well at any gathering. I usually will get Pita or tortillas (I prefer the sprouted wheat pita pockets or tortillas) and make some “chips” by brushing them with coconut oil and sprinkling a mix of salt and paprika on top. Bake them at 400 degrees for 8- 10 minutes.
For the delicious dip you will need:
1 bag of frozen artichoke hearts thawed and chopped; 4 cups of finely chopped kale, spinach, swiss chard or collards;1 garlic clove minced, ⅛ tsp fresh nutmeg; ⅛ tsp cayenne pepper (optional); 1 tsp salt; 1 tsp fresh black pepper;
1 cup organic sour cream (or ½ cup sour cream and ½ greek yogurt); 3 tbsp organic mayo (optional – but really kicks this recipe into high gear); 3 tbs raw parmesan or manchego cheese, plus more for top; coconut oil for greasing.
Pre-heat oven to 375 degrees. Mix all of the above ingredients in a bowl and then put in a greased baking dish. Bake for 30-45 minutes covered. Remove from oven and let sit until cooled. Enjoy with your home made chips!
