Parsley/Apple Salad for Phase II of the HCG Diet

Delicious, Refreshing HCG Diet Parsley/Apple Salad
Truly, this is one of my long time favorites. Nothing can beat the freshness that comes with this salad. Not to mention it is packed full of vitamins, minerals and amazing fiber! I find this salad to be filling and very satisfying as well. I began making this way before I had ever even heard about the HCG Diet. It was just one of those things I discovered when I began putting together the little bit of food I had in my kitchen one evening. That was about 17 years ago! Now, I still enjoy this salad and love that it is a perfect addition to phase II of the HCG Diet program.
Creating this Simple HCG Diet Phase II Salad
Gather some fresh, organic parsely ( 1 bunch) and get it nice and clean. Pat it dry in a cloth. Now, get out a really sharp knife and mince it into small pieces. I use a big cutting board for this and just keep going over it again and again. I have not done this but I am sure you could use a food processor as well. Next get a medium sized apple and also mince it into very small pieces. Mix the two ingredients together and VOILA ... you are done.
Garnishing up this Phase II HCG Diet Salad
You can add some fresh lemon juice if you desire. I actually enjoy it just as it is. You can make some extra and keep it in a glass container in the fridge. It actually keeps for quite some time which is nice. The ratio I generally follow is 1 medium sized apple to 1 medium sized bunch of parsley.
This would count as one fruit and one vegetable serving on the program!
