Healthy Donuts! A wonderful "special" treat after the HCG Diet!

A Donut That Tastes Great and is Packed with Healthy Ingredients

 

When my 5 year old began sharing his strong desire to have a donut with me I was not sure if I wanted grant his wish with a conventional donut loaded with sugar, bad fats and sticky gluten.  Yuck.  I began sifting through recipes and my little buddy and I began to see what kind of donuts we could create in our kitchen with some healthy ingredients.  I even made some modifications that would work for phase III of the HCG Diet program. The recipe(s) were tested a few times and honestly, they are really delicious.

 

Getting Started with the Donut Making ... (there are even modifications for P3 of the HCG Diet)

 

First, you will need to have a donut pan.  A "donut pan"  is basically a cup cake type pan with cirle donut shaped holes that you fill with the batter.  Grease the pan with coconut oil and set aside.  Turn your oven on to 350 degrees and preheat.  Set aside 2 eggs and let them get to room temp.

 

Now, you can mix these ingredients together the dry ingredients:

 

1 and 1/4 cups blanched almond flour

1/4 tsp baking soda

 

Next, mix together the wet ingredients:

 

2 tbsp coconut oil (melted)

3 tbsp maple syrup  *** modification for P3 HCG Diet is 1 tsp liquid stevia

1 tsp vanilla extract

1/2 tsp almond extract

1 tsp apple cider vinegar

egg yolks (set egg whites aside)

 

Blend the wet and dry ingredients together

 

Now, beat the egg whites to stiff peaks and add to the rest of the mixture.

 

Pour into the donut pans and cook on 350 degrees for 10-12 minutes.

 

Take the donuts out once the are golden brown and place to cool for about 30 minutes in the refrigerator.

 

Creating the Glaze and FInsihing Touches to these P3 HCG Diet Friendly Donuts

 

While the donuts are cooling, you can make a double boiler and place an 85% dark chocolate bar, 1/2 tsp stevia drops and 3 tbsp coconut oil in the pan.  Let the ingredients melt together.  Once the donuts have cooled, you can dip them in the chocolate and set on a plate.  Feel free to have fun and sprinkle any toppings that you might enjoy on top.  Let the donuts cool in the fridge and the glaze will harden up a bit.

 

These are SO YUMMY!

 

Note: If you are on P3 of the HCG Diet, I would only recommend having 1/2 serving once or twice per week.
